Wheat Quality Workshops


Each year the Idaho Wheat Commission sponsors two Wheat Quality workshops, the first workshop is held in Aberdeen, Idaho and the second is hosted in Pullman, Washington.

The one-day hands-on learning is about wheat quality. Each participant attends four sessions, which demonstrate the importance of growing quality wheat.
Sessions
Milling: Principles of milling are demonstrated on the Miag pilot scale mill. Participants mill a small sample of wheat on a Quadrumat mill.

Wheat, Flour and Dough Testing: Principles of combustion protein analysis will be demonstrated. Participants will do single kernel wheat characterization and mixograph dough testing.

Baking: Bread baking is demonstrated. Participants bake sugar snap cookies and make Chinese alkaline noodles.

Research: Participants perform a test for polyphenol oxidase, precipitate DNA from leaf tissue and do extract high molecular weight glutenin extraction and polyacrylamide gel electorphoretic visualization.
