Each year the Idaho Wheat Commission sponsors two Wheat Quality workshops, the first workshop is held in Aberdeen, Idaho and the second is hosted in Pullman, Washington.
The one-day hands-on learning is about wheat quality. Each participant attends four sessions, which demonstrate the importance of growing quality wheat. Sessions Milling: Principles of milling are demonstrated on the Miag pilot scale mill. Participants mill a small sample of wheat on a Quadrumat mill.
Wheat, Flour and Dough Testing: Principles of combustion protein analysis will be demonstrated. Participants will do single kernel wheat characterization and mixograph dough testing.
Baking: Bread baking is demonstrated. Participants bake sugar snap cookies and make Chinese alkaline noodles.
Research: Participants perform a test for polyphenol oxidase, precipitate DNA from leaf tissue and do extract high molecular weight glutenin extraction and polyacrylamide gel electorphoretic visualization.
